Today concludes my week of cooking with an iron skillet. It has been fun to experiment with different types of recipes in my iron skillet. Last but not least, we have a skillet chocolate cake from the blog Cookies and Cups. My husband loves chocolate cake and it is my lifelong goal to find a cake that he loves more than any restaurant’s cake. This one was pretty good! The frosting is so creamy and buttery! (Maybe because it is basically all butter!! 😉 )

This morning I was up early to go to work! The Lord has provided a temporary job for me working in the office for the company that my husband and I apartment manage for. For those of you who have been following along on my blog, you know that I got laid off of my job at the end of June. So this is a big answer to prayer!
Unfortunately, that means less time to blog. So my readers get the short end of the stick this morning. I didn’t want to neglect the week of cooking with an iron skillet, but it won’t be as detailed this morning.
Up to bat today, we have the classic frittata recipe. This is a general recipe for a frittata. You can customize it with any kinds of veggies or meats. Just throw in the pan first whatever takes longest to cook. I used cauliflower, mushrooms, and tomatoes. It was delicious. It also reheats well! We reheated pieces of it the next day for a quick breakfast.
