Today concludes my week of cooking with an iron skillet. It has been fun to experiment with different types of recipes in my iron skillet. Last but not least, we have a skillet chocolate cake from the blog Cookies and Cups. My husband loves chocolate cake and it is my lifelong goal to find a cake that he loves more than any restaurant’s cake. This one was pretty good! The frosting is so creamy and buttery! (Maybe because it is basically all butter!! 😉 )

One Week of Cooking with an Iron Skillet // Day Four

This morning I was up early to go to work! The Lord has provided a temporary job for me working in the office for the company that my husband and I apartment manage for. For those of you who have been following along on my blog, you know that I got laid off of my job at the end of June. So this is a big answer to prayer!

Unfortunately, that means less time to blog. So my readers get the short end of the stick this morning. I didn’t want to neglect the week of cooking with an iron skillet, but it won’t be as detailed this morning.

Up to bat today, we have the classic frittata recipe. This is a general recipe for a frittata. You can customize it with any kinds of veggies or meats. Just throw in the pan first whatever takes longest to cook. I used cauliflower, mushrooms, and tomatoes. It was delicious. It also reheats well! We reheated pieces of it the next day for a quick breakfast.

My husband and I are big bread people. We love it. Seriously. We consume an unhealthy amount of bread! And this was good bread. My husband even asked if we could have it again after dinner instead of dessert!! 

I liked this recipe because it is one of those throw it all in a bowl and mix it together kind of no-fuss recipes. The recipe does call for it rise twice, so it is a little time-consuming. But it is not hard to make by any means. Enjoy this recipe from Baker Bettie.

Easy No-knead Skillet Bread

It is fun to choose recipes and to have variety in our food. I was reminded yesterday that the ability to choose is a gracious gift from the Lord. It is not a right. The Lord can take away your freedom to choose any time He chooses. Relish the gift that He has given you to make decisions today.

“My name is Courtney, and I’m addicted to mac and cheese…” That is how the blog post about this macaroni and cheese started on Cook Like a Champion Blog. Since both of those things resonated with me, I thought that I would give this macaroni and cheese a try!

Courtney from Cook Like a Champion was right in her description of this dish!  She says:

This recipe stands on its own.  With white cheddar, Parmigiano-Reggiano and goat cheese, how could it not?  Sour cream and an egg yolk make this dish especially rich, while lemon zest (yes, you read that right) gives it a wonderful brightness I’ve never tasted in macaroni and cheese.  The addition of fresh thyme, my favorite herb, gives the mac and cheese a wonderful aroma and flavor.  The sweet onion is a welcome addition and adds texture to the pasta.  Decadent is the best way to describe this dish…

I don’t know about you, but my mouth started watering when I read that description! After trying it, the conclusion was that the recipe is delicious! However, if you a looking to lose a few pounds this recipe is not for you! This is not health food, despite my use of whole wheat pasta! Try it for yourself with the recipe below.

Tip of the Day: 

Do not wash your iron skillet with soap. It will ruin the seasoning on the pan. Use hot water and a sponge if necessary to get it clean.

One Week of Cooking with an Iron Skillet // Day One

One of the advantages of not working is that I get to experiment with different culinary techniques. I had received an iron skillet for a wedding present, but had never used it until last week. A few days ago I seasoned my skillet for the first time and it went a lot smoother than I thought.

 So for a fun experiment, I thought that this week I would try to cook every day using my iron skillet. This week I will share the recipes with you that I have tried as well as some tips for using an iron skillet.

Today’s recipe was German Pancakes. I have eaten this scrumptious treat before, but I have never made it. My husband was willing to be the guinea pig this morning. We thoroughly enjoyed this pancake recipe, although, as my husband said, it was really more of a dessert! The recipe came from What’s Cooking America.

“Why is it a giant puffball in the corner?!” exclaimed my husband who has never had a German Pancake before.
